If you want to automate the process you can use the install aware GitHub, you wont need to download anything else as it will do it for you and build everything (just make sure you have Xcode 15 beta 8 or higher and the command line tools for Xcode 15 installed), if you already have the GPTK dmg you can also drag that to the field in the app and it will use it instead of grabbing it automatically. If you still want to build it yourself just follow the brew methods in the guide, if you want to skip building you can use the prebuild section, either way the wine part will take a while to finish.
